awkward and awesome

- Getting ready to sit down at the computer lab, I pull my chair out and see red stains. Either someone had a really bad cut on their leg or someone was having their period... Let your mind wander!
- Apparently saying hi to a classmate in the bathroom is unacceptable.
- Walking around campus thinking I look so cool and hip like the other kids, I turn to look at a window where I can see my reflection and it seems as though I have a major slouching problem and my backpack is HUGE!
- in class and my teacher talks about all the wrong things that people did on their papers, why do I feel like she was looking at me the WHOLE TIME?!?
- How do you check to see if you are the one who smells like 'bo' and NOT have it be awkward? - For the record, it WASN'T me

- Presenting two things about me in class and practically tearing up. But it's awesome because other people were tearing up too so I didn't feel too bad.
- Having good dreams.
- Walking up and down the stairs without tripping or stumbling.
- Being almost half way through the Fall semester.
- Glad to be at the middle/end of the week and knowing that I really don't have a crap load of homework to do.

fun food: honeybun cake

you can also make these in cupcake cups! 

My mom found this recipe somewhere on pinterest and it is my favorie breakfast ever! (if you made the recipe and pinned it on pinterest let me know!) The name honeybun doesn't really sound right because it tastes more like cinnamon, but it's really good! It's the perfect mix of cake and cinnamon bun you will ever have!  Trust me ladies you have to try this!

Cake ingredients:
4 whole eggs
1 box yellow cake mix
1 cup sour cream
3/4 cups vegetable oil

Cinnamon swirl:
1 cup light brown sugar
2 teaspoons cinnamon

Frosting ingredients:
2 cups powder sugar
6 tablespoons milk
1 teaspoon vanilla extract

preheat oven to 325
Blend cake mix, eggs, sour cream, and oil until well incorporated.
Pour half of mix into bakeware, take cinnamon swirl and add to the top of the cake mix.
Pour the rest of the cake mix on top of the cinnamon swirl mix.

serves 12

I feel like Monday always comes too fast! This weekend was great! We went out to a "new" place with some good friends, it was one of those hole in the wall places that you don't want to caught in after 9 because that's when all the crazies come out - kind of place.  We ended up sitting around the table eating and talking for almost three hours. I think that's the kind of friendship that everyone looks for, where you can just pick up right where you left off.  I love friends! I love friends because they are good examples, they make you happy, they don't judge, and they always seem to be there when you need them most! So, *raises water bottle, here's to friends, the ones that might as well be family! *clink

school projects that keep me up late

Last night I was up way too late finishing my school project/presentation and now I feel like I'm getting sick. Isn't that the worst? Feeling sick when you have to present a project or even just feeling sick? Yuck!  Either way, I don't like being sick!  (I did good on my presentation though, and I'm so glad it's over!) things to do on a rainy day

Sometimes we have days where it rains so hard that we just want to stay inside and enjoy the clean smell and pitter patter of the rain.  I like to open the windows, turn on a good movie and crochet till my little fingers hurt.  But, there are other things that I enjoy doing as well.  Here are some things that I have done and some things that I want to do:

1. Build a big-kid fort/tent in the family room - I've always thought this would be a fun idea.  I think its always fun to be a kid every now and again.  Just think about it: cozy blankets, hot chocolate, a great movie (or movies), the rain, and your man all locket up in one fort. Good rainy day.

2. Get organized - I know this doesn't seem like a fun idea, but rainy day's can be so productive.  Open the windows so you can feel the crisp cool air, light your favorite candle and turn on some classy or jazz music and dance your way through your work! You will be so happy once you see your finish organizing! And typically getting organized doesn't take all day, you'll have time to do whatever when you are done! (I guess it all depends on how big a mess you have.)

3. Play random games - They don't have to just be board games, get creative and make something up.  Try the one-word story go around the room and have each person add a singe word to the story. Here is a huge list of games that you can play inside the house. Find a game that's collecting dust on the shelf and play!

4. Discover a new hobby/Finish unfinished projects - Maybe you want to learn how to crochet or knit and have some yarn lying around the house. Head over to youtube and search 'how to crochet' (or whatever you want to learn). You can also take the time to finish any unfinished projects.

5. Try a new recipe - You know there's that one recipe you've been wanting to try, but can't seem to find the time. Well, now you have the time. (:

6. Take a nap - You don't always need to be doing something and sometimes taking a nap during a rain storm can be really fun. Leave the windows and doors open and just fall right to sleep.

7. Have a picnic - Sure picnics are fun to have outside, but have you ever had one inside? Make sure you get together all the essentials for an outside picnic just so that it seems real. While on your picnic ask each other questions like these, talk about your day or what your dream vacation is. Just have fun.

if you want to know who I am

 I had to post this picture also because I wanted to show you an up close version. The pictures that I took this morning didn't turn out that great. 

So, weekend was filled with home cooked meals, homework, cooler weather, happiness, black nail polish, laughter and lots more.  One thing I learned is that The Office will always make me laugh no matter how many times I've seen each episode. In fact I feel like it just gets funnier.
Today I wanted to share with you some things about me!

I am:
a God believer
a chocoholic
a scripture reader, sometimes I miss days but I've been doing really good.
a wife
a daughter
a sister of two brothers
a helper
a friend

fun foods: sauteed potatoes

Brand and I made these yummy sauteed potatoes the other night and we really enjoyed them. They are so simple to make, this is definitely a no pressure side dish.

finished product should look a bit more golden with more rosemary on the potatoes. 

You will need
Charlotte potatoes - small golden potatoes can be found at Fry's
Garlic (one clove really depends on how much you make)
Olive oil

First, (after you have washed the potatoes of course) cut them in half (see picture to determine what "in half" means.)
Second, place them in a pot of salted boiling water.  Cook them for 4-5 minutes with the lid on.  To test that they are ready take a small knife and poke the potato, the knife should just run through with a little bit of resistance.
Third, dump them into a colander (make sure the colander has a pot underneath it because you want the strained potatoes to sit in the steam of the water, this will allow them to crisp)
Fourth, get a non stick frying pan hot, place olive oil in the frying pan.
Fifth, place the potatoes in the frying pan with the flat part down, here we are going to get them crispy.
Sixth, salt, pepper and crushed garlic to the potatoes while waiting for them to turn a gold color (on the bottom).
Seventh, once the potatoes are golden on the bottom flip them over to the rounded backs.
Eighth, place the butter in the pan along with chopped rosemary (you will want to place the rosemary on the potatoes though).
Ninth, take the potatoes out of the pan and you are done!

forget me not

My friend posted this on facebook earlier this morning, I remember the first time I heard this talk, I felt like it was 100% directed at me. I've always had a hard time with comparing my self to those around me, thinking I was not as 'good' as everyone else.  Obviously this isn't true, but this video truly helped me remember that we are great in the sight of God.  This video really touched my life and I only hope that it touches your life as well.  It's always good to know and remember that God loves us and that he has not forgotten about us.

So remember when I was doing the 30x30 challenge? Yeah, so I didn't really finish it and I feel really dumb! I think that it was just difficult because it was so hot outside and I felt like I couldn't really layer anything.  But I guess I shouldn't make excuses for my self.  One thing is for sure though, I'm wanting to do it again later this fall! I really think it will be so much easier!
What I learned:
That you can mix and match almost anything.  Coming up with new ideas it fun and makes me feel creative, it also helps me with my money situation.
What I would do different:
I would use different pants, it was hard to incorporate my work pants with the outfits because they just felt really sloppy. Next time I need different necklaces, the ones I picked didn't really go with anything. So I guess mostly I would changed the selection of clothes that I use.

awkward and awesome

^^ my how I feel about homework face, it doesn't make me happy.

- Sitting in the computer lab. The lady next to me gets her lunch out, which of course has to be in the most noisy container.  Next I hear chomp, chomp, chomp, followed by a very loud and deep belch.  Thank you neighbor, I really wanted to hear you chomp down your lunch and know that it was satisfying.
- Sitting in the computer lab (as you've noticed I spend too much time in the computer lab) the lady across the way starts yelling at her computer. At first I think, who the heck is she talking to? Then I see that there is no one around her and she is staring angrily at the computer. Then she says: Why are you not doing what I tell you?!  I just sit there and wait for her next remark. Can you say Psycho?!
- Driving into the sunset as Brand and I notice paw prints going straight up our windshield.  Realizing it's the neighbor's cat, awkward thing.. they don't claim it's their cat even though we have seen them let it in and out of their house.
- The fact that I get to class a half hour early every day, I think people are starting to think I'm that weird girl who likes to always be first to class... I'm not that girl!
- Not being able to find my keys, someone saying, did you check your computer bag? me: no I didn't even use my computer they can't be there. Five minutes later I check my computer bag just because I'm at a loss for where my flippin keys are and sure enough... in the bag.

- Getting good grades! There currently is only a few other things that would make me more happy.
- Selling my first ear warmer of the season! Definitely cool.
- Discovering a new way to cook eggs, and I actually like it!
- Waking up this morning and not having anywhere to be, and better yet morning cuddles! They might just be the best!
- No pop quiz in class this week! They give me the worst anxiety and I about have a panic attack as my teacher passes out the quiz. Also, I hate hearing every one's pencil taps on the desk as they write, it makes me feel like I'm not writing the right answers because my taps don't sound the same!

fun food: not your typical scrambled egg

Happy Tuesday Friends! We've made it to another Tuesday. Today I want to share with you this awesome scrambled egg recipe, only they aren't your typical scrambled eggs. When I eat these scrambled eggs I like to picture my self in Paris sitting next to the Eiffel Tower, with my designer sunglasses on laughing with Brand about how joyous the day will be. I mean, we are in Paris after all! But then I wake up and I'm sitting on the floor eating, because when you are married the dinner table is more of an inconvenience, especially when you can just sit down in front of the tv and watch your favorite show with your favorite person... Okay, now I'm getting off topic. The recipe:

First, crack the eggs into a pan or even a small pot (this will make stirring easier).  Normally about 3-4 eggs are easiest to manage in a pot unless you use a larger pot/pan.
Then add about a tablespoon of butter (be generous).

Now whisk the eggs over a medium heat.  Note: do not whisk the eggs outside of the pot/pan and do NOT season them yet as this will caused the eggs to break down and become more runny/watery than they ought to be.  The important thing now is to continually stir the eggs.  This is like the risotto in that you must continue to stir constantly throughout the process (if you must stop to put toast in the toaster or something else that's fine, but be quick about it).
Now, when you start seeing the eggs start to cook take them off the heat and continue stirring.  You don't want to cook them all the way through in one go.  It is a slow, gradual process.  You will take them on and off the heat a few times throughout cooking while always stirring.
Then, when the eggs appear to be cooked with the consistency of a runny casserole (see picture) remove them from the heat and add your seasonings (regular salt and ground pepper are plenty good enough).
Now, add half tablespoon of creme fraiche (not something you can buy at just any normal grocery store, though it is easy to make at home if you plan 48hr in advance) and stir in completely.  This will help cool down the eggs so they do not overcook.
Now, all that's left is to chop up some chives (green onions-what we used because we couldn't find chives) and stir them into the eggs.
Once you are done you can pour (yes, I said pour, remember that the consistency should not be too dry, though it should not be dripping out of the pan either) the eggs onto a piece of toasted bread or just enjoy them without.

(I prefer mine not on toast, but that's just me!)

alyssa and the terrible, horrible, no good, very bad weekend

Okay, so it wasn't that bad.  Lets just say I had a lot on my mind and I let it get to me. Sometimes life can be so difficult and we just want to curl up in a ball and tell the knocking world to just go away! But, then we get over our slump of sadness an realize that we have it so darn good!  It's moments like these that help us grow and become better people, they are hard to live through but when the day is done we have something to look back on and say, holy cow I'm so glad that's over!

I hope your weekend made you stronger friends!
